🇨🇵 Boulettes de légumineuses stew 🍃

🇨🇵 Vegan Meatballs Stew 💥 (Magic in the Kitchen) Welcome to the third installment of this “Magic in the Kitchen” segment. This time we are going to prepare a “ragoût de boulettes de légumineuses”, that is, a legume meatball stew. We are going to replace the meat with legumes, and I chose black beans since their color makes them look more like meat and they are loaded with clean proteins. Mind you, I am not vegan, I just try to reduce my consumption of animal products as much as possible for the reasons explained in my video HABIT #10. 💥

Here’s the list of ingredients below. I recommend that you have everything cut up and, as always, try to plan your meal, infusing it with all the good vibes. So put on your apron and listen up so you can learn some French cooking terms. Ça vous dit?

For the meatballs (boulettes):

225 g black beans (haricots noirs)

1 splash olive oil or ghee ( huile d'olive)

2 cloves garlic (gousses d'ail) 60 g oats (avoine)

4 shallots (échalottes)

1 fresh parsley, chopped (persil frais ciselé)

3 teaspoons tomato concentrate (tomates)

1 tbsp Himalayan salt

1 tbsp. à c. of paprika or some dry seasoning that enhances the flavor

2 tablespoons of flour (2 tbsp. à s. de farine)

For the sauce:

1 shallot

1 tbsp of tomato concentrate (concentré de tomate)

200 ml vegetable broth (bouillon de legumes)

1 fresh bay leaf (laurier)

1 splash Olive oil or ghee (huile d'olive)

1 tsp. of corn or potato starch (féculant)

3 carrots (carottes)

3 potatoes (pommes de terre) And enjoy!
